About the Recipe
Egg white bites are incredibly versatile and rich in protein. Although they might be slightly less nutrient-dense than regular egg bites, they aren't intended as a substitute. We compensate for this by incorporating some healthy vegetables into the egg white bites and serving them on the side as well! The parmesan cheese is naturally lactose-free, and the egg white bites are gluten-free, making them a great protein-rich snack!
They are really convenient to grab on the go, and definitely more cost-effective than purchasing the bites from Starbucks itself. You're going to need a sheet pan and a silicone muffin pan.

Ingredients
3 cups of egg whites
1 cup of sautéed diced peppers (*see note below)
1/8 cup of chopped chives
freshly shredded parmesan cheese (naturally lactose-free)
boiled water for pan
*Note: Make sure to have sautéed peppers ready ahead of time. I diced some peppers and sautéed them with diced onions and a little olive oil. I then season them with rosemary, paprika, garlic powder, oregano, black pepper, and a dash of all-spice seasoning.
Preparation
Preheat oven to 425F, and start to boil some water in a kettle or pot. You're going to need this later when filling the tray that the silicone muffin pan is in.
Start by chopping your chives into tiny pieces, and make sure you have about 1 cup of previously sautéed peppers.
Measure out 3 cups of egg whites and pour them into a bowl. Then, add the chives and sautéed peppers and give it a good mix.
Place your silicone muffin pan, into a baking tray. Then fill your baking tray halfway up the silicone muffin pan, with boiling water.
Pour the mixture into your silicone baking pan and distribute it equally, filling it about 3/4 of the way through. Then, top it with a little bit of shredded parmesan cheese. Now that it's ready, you can pop it in the oven and let it bake for about 45-50 minutes.
Once it's done baking, remove it from the oven and let it cool slightly (about 10 minutes). Then, scoop the egg white bites up and place them on paper towels. I like to do this because it absorbs any moisture or water that the bites might release.
You can store them in an airtight container, and enjoy them throughout the week!
