This Fig Snacking Cake is packed with nutritents and is full of fiber! Its gluten free, dairy free, and refined sugar free. It moist and bursting with flavor.
Let's talk about some health benefits that figs provide. They are great for digestion, can help manage blood sugar levels, improve cardiovascular health, and promote healthy skin. They are a great source of fiber, antioxidants, calcium, potassium, iron, copper, vitamin B6, and K.
When they are in season, and I have a couple that have ripened slightly and need to be used up, i love making this snacking cake and topping it with tahini afterwards.
The flavor in itself is very warm, cozy, and makes you want to curl up in front of the TV and have a nice night in.

Ingredients
2 cups almond flour
2 eggs
1/2 cup unsweetened coconut yogurt
1 tsp baking soda
1 tsp apple cider vinegar (ACV)
1/4 cup unsweetened almond milk
1/4 cup pure maple syrup
1 tsp vanilla extract
1/2 tbsp cinnamon (plus more for topping)
Pinch of salt
Topping:
3/4 tbsp coconut sugar
Sprinkle some more cinnamon
Sliced almonds
8-10 figs (peeled and sliced)
Preparation
Preheat your oven to 340F. Now grab a bowl and start mixing your wet ingredients from the batter list. Then add in your dry ingredients. Mix it well, and line your cake pan with some parchment paper. Pour in your batter and spread evenly.
Now go ahead and peel your figs, approximately 8-10 figs. Now cut them in half and gently place them on top of the batter you already prepared.
Now go ahead and mix together the coconut sugar and cinnamon from the “toppings” list.
Gently sprinkle this mixture over the batter, top it with some slivered almonds, then go ahead and pop it in the oven.
Let it bake for approximately 40 minutes, or until the toothpick comes out clean.
Once done, remove and let it cool before slicing and serving. You can top it with some tahini if you would like, but it’s honestly just as good on its own.. Enjoy!!
