Let me introduce these Peppermint Cocoa Overnight Oats! This recipe is crafted for a single serving, but it's super easy to expand for meal prepping magic.
It's got a delicious dark chocolate and cocoa taste with a touch of fresh peppermint. Perfect for a sweet breakfast or snack, and it'll satisfy your sweet tooth without loading up on sugar.

Ingredients
1/2 cup oats
1/2 cup almond milk/yogurt
1/4 tsp peppermint extract
1 scoop chocolate protein powder (optional, and add 2-4 Tbsp more of almond milk/yogurt)
2 Tbsp unsweetened cocoa
1 Tbsp chia seeds
2 tsp maple syrup
**Optional Toppings: crushed peppermint (or candy canes), chocolate chips, mini marshmallows
Preparation
Combine and mix all the ingredients in an airtight container.
Store in the fridge, and enjoy in the morning!
**note: The mixture should resemble a little bit like cake batter -- not overly runny, but still has a little bit of movement. Don't worry, because it will thicken up overnight -- hence the name overnight oats :)
