Ingredients
1/4 cup pumpkin puree
2 tsp maple syrup
1-2 Tbsp chia seeds
1/2 cup oats
1/2 cup milk (or almond milk for dairy-free option)
1/2 tsp pumpkin pie spice
1/2 tsp vanilla extract
1 scoop of vanilla protein powder (optional, and add 1/4 cup more milk or yogurt)
**optional toppings: chocolate chips, pumpkin seeds, or any type of nut
Preparation
