Ingredients
3 large zucchinis
2 eggs
1 Tbsp almond flour (feel free to use chickpea/oat flour as a replacement)
1 bunch of parsley (roughly chopped)
Zest of 1/2 lemon
1/2 tsp salt
Preparation
Wash and peel your zucchinis, cutting the top and bottom ends off. Use a food processor and grate your zucchini.
Use a cheese strainer, or cotton cloth, to strain your zucchini shreds and get all the water out.
Now preheat your oven to 350F, and line your pan with parchment paper.
In a bowl, whisk together 2 eggs. Then add in your strained zucchini and almond flour, mixing them together -- make sure not to over-mix because the zucchini will release more water in the process.
Add in your roughly chopped parsley, salt, and lemon zest. Give it a final mix-in.
Pour the prepared mixture onto a baking tray that's lined with parchment paper. Smooth it into a thin even layer, guaranteeing it bakes evenly.
Pop it in the oven for about 30-40 minutes, but depending on how thin you laid it out, the timing might differ. Sometimes I like to broil it for about 2 minutes for a more golden and crunchy top -- but this is optional.
Once done, you can serve it with some Greek yogurt (or dairy-free alternative yogurt) or sprinkle some creamy crumbled goat cheese on top.
It's just so fresh with the lemon and parsley adding a little zing to it! And it's such an easy little appetizer or snack. Feel free to double the recipe to make a larger batch, perfect for meal prep.
